I would suggest allowing players to be able to pick from matches up until 1 minute before their kick off time. To counter people trying to change, just simply state that their choices become locked in as soon as the team they have selected kick off eg at 12:45 yesterday all selections for Leicester are locked in and can't be changed

But then someone could wait until the last match of the weekend and basically just predict who won't lose.
