Wife has just told me dinner might be a wee bit later than 6pm as she's making bramble jelly at the moment....she has consoled me by offering me wine which I have gratefully accepted.........................well, you have to don't you.....

Oh no mate. If I did it wouldn't get made at all.....having been married for nigh on 37 years you learn there are times best to keep your gob firmly shut, smile & go with the flow....

I am one greedy fucker at times when it comes to grub. As I said elsewhere the wife (my wife) was making sausage rolls this morning. The wifie over the road (the one that occasionally hands stuff in for me) got a pile handed in for her & her man. Sooooo.....I had pile slabbered with tommy sauce and had a couple on a buttered roll also.......and there's still more to come out of the oven. They're like bloody pringles.......but I like it.....

Sausage rolls on a buttered roll? Madness. I had a big piece of my son's birthday cake, got a bit of a bellyache now.

I shall shortly be sitting down to a slice of angel cut haddock (breaded), chips and peas....love a bit of fish.

Go on then, recipe me up, I fancy making that! Maybe with rigatoni though as aint nobody got time for spaghetti!


1 or 2 large diced chicken breasts
1 finely chopped brown onion
3 cloves of finely chopped garlic
Parsley to taste
Pepper to taste
Salt to taste
1 pot of Double Cream
Grated cheese (I use cheddar, but Parmesan would probably be better)
5 or 6 sliced Mushrooms (decent sized, I tend to use Chestnut)
Pack of unsmoked bacon diced (6 rashers will do)
Spaghetti/pasta of your choice
Bit of oil
1 high quality (so not oxo, maggi or knorr is preferred) chicken stock cube

1. Cook up your chicken and onions in pan with a bit of oil (preferably a non-stick wok!), once the chicken is sealed and the onions are soft, add the garlic, mushrooms, bacon, chicken stock and a touch of pepper and salt (careful with the salt dependent on how salty your bacon and stock are!)
2. Cook your pasta al dente (I tend to do it for just over half of what is recommended, spaghetti says 10, I cook for 6), this can be done before or during the cooking of the rest.
3. Once your mushrooms, bacon etc are nicely cooked through turn the heat right down, once it's cooled off a bit add the cream, cheese and parsley you may find you want a bit of extra pepper afterwards.
4. Simmer for about 5 minutes keeping a careful eye on it, no one likes burnt cream.
5. Once simmered, add pasta and simmer for a further 2 minutes still keeping an eye on it.
6. Serve it up and enjoy!

Yeah, I forgot to add that the chicken/bacon need to be diced up.
